I Have A Bream


What I desperately need is the will to take responsibility for the ingredients. That is what a chef truly needs, respect for what must be harvested or killed. A chef cannot waste any of this precious food, And a chef must have the will to create, to appreciate everything because a chef creates more than a dish, they create a memory or remind us of dreams. So I may only have to prepare a fish, but I know I can change someone because I have a bream.
