Omelette


On a china bowl’s rim break three fresh eggs

 

Mix by fork, pinch of salt...mix some more

 

Every kitchen deserves a French omelette pan

 

Lump of butter, high heat until the foam subsides

 

Empty in the bowl...let it bubble

 

Take the handle, keep flat and shake back and forth

 

The fork then swirls a satellite view of a super storm until

 

Everything is calm, patted down to gently roll out like a cigar.
